With its purple brown colour and oval shape, this is one of the most famous types of olive. Like most other olives, Kalamata Olives undergo a 60-day fermentation process in a brine of salt and vinegar before they are ready to eat, with their distinctive but mild olive flavour.

Kalamata Olives are typically enjoyed as a snack for appetizers or as part of the Italian Antipasto. Their mild flavour makes them well suited to a homemade olive tapenade.
