Tailless rice pudding is short, plump, polished rice that boils out and therefore cannot be kept loose after cooking. In addition to rice porridge and ris á la mande, rice pudding can also be used as rice for risotto - avoid overcooking the risotto. When cooking rice porridge, it is important to do so over low heat (with a lid) and to stir the pot repeatedly during cooking. If there is too much heat on the hob or the porridge is not stirred, it will stick to the bottom of the pot.
