Sandwich with Karl Johan and grilled aubergine

  • 2 chopsticks
  • 1 glass Svansø Sandwich Spread with Karl Johan mushrooms
  • 1 large or two small aubergines
  • ½ tsp. salt
  • 1 tbsp. Svansø Organic Olive Oil
  • 1-2 handfuls of rocket salad
  • 1 dl. pickled red onions
  • 1 dl. fresh herbs


1. Warm sourdough baguettes, cut in half and split lengthwise.

2. Spread sandwich spread on bottoms and tops.

3. Cut the aubergine into long slices, about ½ cm thick.

4. Sprinkle the slices with a little salt and leave to soak for 10 minutes.

5. Wipe the slices with paper towel and fry them in olive oil in a pan or grill.

6. Spread the rocket salad on the bases and place the fried aubergines on top.

7. Top with red onions and herbs, place the top of the baguette on top and serve.
