Vegan burger with tomato spread, fries, falafel and vegetables

  • Burger bun with pumpkin seeds and sesame:
  • 5 dl lukewarm water
  • 25 g yeast
  • 1 tsp. salt
  • 3 tbsp. Svansø Flaxseeds, crushed
  • 1 dl plant-based yoghurt
  • 1,5 dl Svansø Pumpkin seeds
  • 2 dl rye flour
  • 10 dl wheat flour
  • 1 dl Svansø Sesame seeds
  • Tomato spread:
  • 100 g Svansø Almonds
  • 1 jar Svansø Sun-dried tomatoes (120 g drained weight)
  • 1 clove of garlic
  • 1 handful of fresh parsley
  • 2 tbsp. yeast flakes (can be omitted)
  • Salt, pepper & lemon
  • Filling:
  • 12 falafels (can be bought in various supermarkets)
  • 150 g mixed salad
  • Other vegetables such as pickled red onions, tomatoes, avocados, etc.


Burger bun:
1. Dissolve yeast in lukewarm water.

2. Add salt, crushed flaxseed, plant-based yoghurt and pumpkin seeds - stir well to avoid lumps.

3. Then add the flour a little at a time and knead the dough until it is smooth. If you have a mixer, run the dough through it - it saves you a lot of effort. If you don't have a mixer, just knead the dough by hand.

4. Leave the dough to rise in a warm place - preferably for at least 2 hours - or until the dough has risen to double its size.

5. Then form into large burger buns - the recipe makes about 10. Place them on a baking tray with baking paper and bake in the oven at 180°C for about 20 minutes. Remember to keep an eye on the buns, as all ovens are different.

6. Cook the falafels as directed in either the microwave or oven, and rinse the lettuce.

7. Cut the burger buns in half.

8. Put the tomato spread on the bottom, followed by the lettuce.

9. Add the warm falafels (3 for each burger) and finish with pickled red onions, tomatoes, avocado and whatever else you fancy.
