Raspberry Bombs

  • Cake base:
  • 125 g white chocolate
  • 75 g Svansø Cane sugar
  • 100 g butter
  • 100 g Svansø Almond flour
  • 1 tsp. baking powder
  • 2 eggs
  • Raspberry mousse:
  • 225 g thawed raspberries from the freezer
  • 3 tbsp. Svansø Cane sugar
  • 1 ½ dl cream
  • 2 egg whites
  • 2 bl. husblas
  • Glaze:
  • 2 leaves husblas
  • 200 g white chocolate
  • 100 g cream
  • 2 tbsp. water
  • 2 tbsp. glucose syrup
  • 1 tbsp. coconut oil (or a neutral oil)
  • Red pasta colour
  • Svansø Freeze-dried raspberries


1. Melt the chocolate, cane sugar and butter over a bain-marie and mix well with the almond flour, baking powder and eggs.

2. Put the dough in a small baking pan and bake in the oven at 180 degrees for 20 minutes.

3. Let the base cool and cut out 6 bases, about 8 cm in diameter.

Raspberry mousse
1. Blend the thawed raspberries (use both juice and berries) with icing sugar.

2. Whip the cream until foamy and beat the egg whites until stiff.

3. Soak 2 leaves of husblas in cold water for about 5 minutes.

4. Fold the whipped cream into the blended raspberries and stir gently until the mixture is smooth.

5. Then carefully fold in the beaten egg whites.

6. Melt the husblas over a water bath and stir the melted husblas into the raspberry mousse.

7. Put the mousse in hemispherical moulds and place a cut-out base of the same diameter on each mousse, like a "lid".

8. Put the bombs in the freezer for at least 3-4 hours and preferably longer.

9. Turn them out so that they stand on the cake base when they are to be covered with glaze.

1. Soak the husblas in cold water and melt the chocolate over a water bath.

2. Put the cream, water and glucose syrup in a pan and heat it up, then mix it well with the melted chocolate.

3. Then stir in the coconut oil along with the paste colour.

4. Let the mass cool down to a temperature of about 35 degrees.

5. When the glass is at the right temperature, remove the bombs from the freezer and place them, cake-side down, on a rack.

6. Pour the glaze over each cake and sprinkle with freeze-dried raspberries.
