Ingredients
- Butter dough:
- 270 g wheat flour
- 120 g sugar
- 2 pinches of vanilla powder
- 200 g cold butter
- 1–2 tablespoons of water
- Filling:
- ½ dl syrup
- ½ dl liquid flower honey
- 80 g brown sugar
- 40 g butter

200 g Svansø
- 3 large eggs
Preparation
1. Place the wheat flour, sugar, and vanilla powder in a food processor.
2. Cut the butter into small cubes and place them in the food processor.
3. Quickly mix the dough for a few seconds until it forms a crumbly mixture, then turn it out onto the counter. Quickly shape the dough into a ball using 1–2 tablespoons of water, and wrap it in plastic wrap. Refrigerate it for about ½ hour
4. Preheat the oven to 180 degrees.
5. Roll out the dough on a floured surface.
6. Place it in a 26-cm pie pan lined with parchment paper.
7. Pre-bake the tart crust for 15 minutes.
8. Put the syrup, honey, brown sugar, and butter in a saucepan. Melt them together thoroughly over medium heat. Then let the mixture cool slightly.
9. Coarsely chop the nuts.
10. Add the nuts and eggs to the sugar mixture and stir well.
11. Immediately pour the mixture into the pre-baked tart shell and bake the tart for about 30 minutes.
12. Let the tart cool completely before cutting it.
TIP: It’s best to bake it the day before and store it in the refrigerator. That way, it will have a lovely, confection-like texture.
