Lobster with aioli

  • 1 dl sea salt
  • 1 tbsp. paprika
  • 2 hummers at 600 g
  • 1 frillice lettuce head
  • 1 ripe mango
  • 1 pomegranate
  • 1 bdt. fresh dill
  • 1 lemon
  • 2 glasses Svansø Organic Aioli
  • Coarse bread


1. Fill a large saucepan with water and bring it to the boil. Add sea salt and paprika.

2. Kill the lobsters by stabbing the shell behind the eyes with a knife. Boil the lobsters for 12-15 minutes, then rinse them in cold water and put them in the fridge.

3. When the lobsters are cold, remove the meat from the shell and arrange on plates with lettuce, mango, pomegranate, dill and lemon.

4. Serve with coarse bread and lots of aioli.

A glass of cool Chablis will go well with the lobster!
