Quinoa salad with avocado, smiling eggs and Thousand Island condiment

  • 2 cups quinoa
  • 2 large eggs
  • 10-12 cocktail tomatoes
  • ½ cucumber
  • 1 red onion
  • 1 large avocado
  • ½ lemon
  • 100 g baby lettuce or spinach
  • Svansø Organic Plant-based Thousand Island


Cook the quinoa according to the instructions on the packet and leave to cool.

Boil the eggs for 6-7 minutes and cool.

Cut cocktail tomatoes into halves or quarters, cucumber into thin slices and red onion into slices.

Cut the avocado into thin slices and drizzle with lemon juice.

Arrange quinoa with tomato, cucumber, red onion, avocado and lettuce. Peel the eggs, cut them into halves or quarters and place them on the salad.

Serve the salad with Thousand Island dressing.
