Homemade warm red cabbage

Ingredients

  • 600-700 g fresh red cabbage
  • 1 tbsp. coconut oil or butter
  • 2 tbsp. Svansø Balsamic vinegar
  • 3 tbsp. acacia honey
  • 1 cinnamon stick
  • 5 star anise (can be omitted)
  • 100 g fresh cranberries
  • ½ tsp. salt

Preparation

1. Finely chop red cabbage and heat coconut oil or butter in a pan.

2. Add the red cabbage and let it simmer for a few minutes in the fat over medium heat.

3. Add the balsamic vinegar, acacia honey, cinnamon and star anise.

4. Stir well and simmer the red cabbage for 10-15 minutes.

5. Add the fresh cranberries and let them heat up for about 5 minutes.

6. Season with salt and a little extra honey if you want a sweeter red cabbage.

7. Remove the cinnamon stick and star anise before serving.

Tip: The red cabbage can be made 1-2 days in advance and defrosted before serving. The cooking time depends on how much bite you want in the red cabbage. If you want a completely soft cabbage, you can cook it for an extra 5-10 minutes before adding the cranberries.
