Broccoli salad with avocado and soy nuts

Ingredients

Preparation

1. Toast the nuts in a dry frying pan until they have taken on a little colour.

2. Mix the soy sauce with the lemon juice and zest and pour over the nuts. Immediately turn off the pan, stir well and place the nuts to cool, for example on baking paper.

3. Cut the broccoli into very small florets and the avocado into slices.

4. Cut cherry tomatoes into slices or quarters, then mix the tomatoes with baby lettuce, broccoli and avocado.

5. Garnish with fresh sprouts and sprinkle with soy nuts.

6. Serve the salad with Svansø Thousand Island dressing

Tip: Add prawns and some cooked pasta for a more filling meal salad.
