Pesto Baked Salmon

  • 2 glasses Svansø green pesto
  • 1 tbsp. organic breadcrumbs
  • 4 boneless salmon fillets (600-700g)
  • 50 g pine nuts
  • 2 tbsp. Svansø Organic olive oil
  • 4 tbsp. chopped, organic parmesan
  • 1 tsp. sea salt
  • 1 clove pressed organic garlic
  • 4 large organic tomatoes
  • 400 g organic spaghetti
  • Organic basil


1. Mix one glass of pesto with the breadcrumbs.

2. Place the 4 salmon fillets, skin side down, in an ovenproof dish and pour the pesto mixture on top.

3. Sprinkle with a little extra breadcrumbs.

4. Finely chop the pine nuts and mix them in a bowl with the olive oil, Parmesan, sea salt and pressed garlic.

5. Cut the tomatoes in half and place the pine nut mixture on top of the 8 tomato halves.

6. Place the tomatoes in an ovenproof dish and bake in the oven with the salmon for about 20 minutes at 200°C.

7. Cook the spaghetti according to the instructions on the packet.

8. Drain the water in a sieve and mix the spaghetti with the second jar of pesto.

8. Arrange on plates and garnish with fresh basil.
