Pastasalat med grøn pesto

Ingredients

  • 350 g Orzo pasta
  • 350 g cherrytomater i blandede farver
  • 1 agurk, kernerne skåret fra
  • 100 g kalamata oliven
  • 2 spring onions
  • 150 g kogte bønner fx Cannelini
  • 15 g frisk basilikum (ca. bladene fra 1 lille potte)
  • 2 tbsp. Svansø Virgin Olive Oil
  • 3 spsk. æblecidereddike
  • Fintrevet skal fra ½ økologisk citron
  • 1 jar Svansø Green Pesto
  • Flag salt
  • Freshly ground pepper

Preparation

  1. Bring en stor gryde med vand og lidt salt i kog.
  2. Når vandet koger tilsættes pasta, og den koges al dente.
  3. Hæld vandet fra og skyl pastaen under koldt vand, så den køles helt ned. Sæt til side.
  4. Skær tomater, agurk, forårsløg og oliven i små fine stykker. Kom det i en stor skål.
  5. Hak bønnerne groft og kom i skålen.
  6. Hak basilikum groft og kom det i skålen.
  7. Rør olivenolie sammen med æblecidereddike, citronskal, flagesalt og peber.
  8. Vend pasta godt rundt med grøntsagerne og vend dressingen samt pesto i.
