Italian potato salad

1. Wash the potatoes and boil them until tender.

2. Drain and leave to cool in the fridge for 2 hours.

3. Drain the oil from the sun-dried tomatoes and garlic.

4. Halve the cooled potatoes and mix with the pesto, sun-dried tomatoes, garlic, Parmesan, red onion, capers, chopped walnuts and halved cherry tomatoes.

The potato salad is a good accompaniment to most meat dishes. Try it with grilled pork chops, for example.
