Lamb with couscous salad

  • 500 g boneless lamb sirloin
  • 4 cloves of garlic
  • 1 jar Svansø Chili pesto
  • 4 dl Couscous
  • 6 dl water
  • 2 tbsp. Svansø Olive oil
  • Juice of a lime
  • 1 jar sun-dried tomatoes
  • 100 g feta from block
  • 50 g pine nuts
  • 1 bunch chopped spring onions
  • ½ sliced red onion
  • 1 chopped parsley
  • Sea salt


1. Marinate the lamb loins for an hour in a mixture of 2 cloves of garlic and half of the pesto.

2. Pour the couscous into a bowl and cover with boiling water and olive oil.

3. Stir well and leave the couscous to soak for 5 minutes.

4. Drain the sun-dried tomatoes and mix into the couscous with the lime juice, roughly chopped feta, pine nuts, spring onions, red onions and parsley.

5. Stir well and season with salt.

6. Roast the lamb on skewers on a hot grill pan and serve with the couscous.

7. Use the rest of the pesto as a dip for the dish.
