Chicken with lentils

1. Soak the lentils in a bowl for 8-12 hours.

2. Then rinse the lentils in cold water and boil them for about 5 minutes in lightly salted water.

3. Cut the chicken fillets into strips, the chorizo into slices and the peppers into strips.

4. Heat the olive oil in a large pan and fry the chicken and chorizo with the chopped garlic for about 2 minutes.

5. Season with salt and pepper. Add the peppers and cashew nuts and fry again for about 2 minutes.

6. Add the cooked, drained lentils and sprinkle with lemon juice. Fry for about 1 minute more.

7. Remove the pan from the heat and add the baby spinach.

8. Serve immediately with coarse bread.
