Crushed potatoes with green pesto

1. Boil the potatoes in lightly salted water until tender, about 20 minutes

2. Grease a baking pan with olive oil and pour the potatoes into it.

3. "Crush" the potatoes by mashing them flat with e.g. a spoon or the bottom of a glass

4. Spread the potatoes with a layer of pesto and sprinkle with Parmesan

5. Bake the potatoes in the oven at 200 degrees for 20-25 minutes, until they are crispy and golden on the edges.

6. Sprinkle with basil and salt flakes


TIP: Serve the crushed potatoes as a snack or starter with aioli to dip in, or as an accompaniment to a main course.
