Quinoa Chicken Nuggets

1. Cook the quinoa according to the instructions on the bag.

2. Drain in a sieve, then mix with chives and sea salt.

3. Cut the chicken into smaller pieces.

4. Fold the chicken pieces into the almond flour, then into the beaten egg and finally into the quinoa mixture.

5. Place the nuggets on a baking tray and drizzle a little olive oil over the pieces.

6. Bake in the oven at 225°C for 12-15 minutes until golden.

Enjoy them with aioli as a dip.
