Bruschetta pizza

  • 20 g yeast
  • 2½ dl lukewarm water
  • 400 g wheat flour
  • 1 tbsp. Svansø olive oil
  • 1 tsp. salt
  • 1 glass Bruschetta
  • 70 g tomato concentrate
  • 200 g grated Emmental cheese
  • 1 glass grilled artichokes
  • 6 slices Italian ham
  • 4-5 portobello mushrooms
  • Dried oregano
  • Fresh rocket


1. Stir the yeast into the lukewarm water.

2. Add the flour, oil and salt and knead the dough well.

3. Leave to rise in a cool place for at least 30 minutes.

4. Divide the dough into 6 pieces and roll out the pieces into small pizzas.

5. Mix the bruschetta and tomato concentrate together and divide between the 6 bases.

6. Spread the cheese and top with artichokes, ham and sliced portobello mushrooms.

7. Sprinkle with oregano and bake the pizzas for about 8 minutes at 250°C.

(Alternatively on a hot pizza stone for 7-8 minutes at 275°C)
