Fresh spring rolls

1. Cut the cucumber into 24 sticks.

2. Remove the skin and stones from the avocado and cut into 12 slices.

3. Cook the rice noodles according to the instructions on the packet, rinse them when cold and stir in ½ dl. Mango/Chili Dressing.

4. Place a very wet tea towel on a lard board - it should be wet all the time.

5. Place a sheet of rice paper on the cloth to soften the paper. Turn the paper over and add extra water.

6. Place the sesame seeds, cucumber, avocado, lettuce, mint and rice noodles in the middle of the soaked paper. Lay them end to end, leaving 3 cm free on each side.

7. Fold the sides over the filling, then roll the roll as tightly as you can.

8. Serve the rolls with Mango/Chilli Dressing as a dipping sauce.
