Baked sweet potatoes with garlic condiment and marinated lentils

  • 4 medium sweet potatoes
  • 100 g green lentils
  • 1 tbsp. Svansø Virgin Olive Oil
  • 1 tsp. finely grated lime zest
  • 2 tsp. finely chopped fresh red chili
  • 1 tsp. salt
  • 1 bell pepper
  • 1 dl parsley
  • 2 large ripe avocados
  • 2 cloves of garlic
  • 1 lime
  • ½ tsp. salt
  • 1-2 dl Svansø Organic Garlic Dressing


1. Cut a cross with a sharp knife in each sweet potato and bake them in the oven for about 50 minutes at 200°C.

2. Cook the lentils according to the instructions on the packaging. Drain and toss with olive oil, lime zest, chilli and salt.

3. Cut the peppers into small cubes and chop the parsley. Mix both with the lentils.

4. Mash the avocados with a fork. Finely grate the garlic and mix it into the avocados, together with the juice of 1 lime and salt. Mix well.

5. Open the baked sweet potatoes by pressing them lightly on the sides and fill them with the marinated lentils.

6. Top with a little guacamole and serve the rest as a side dish.

7. Pour over the Garlic Dressing and sprinkle with dried chilli flakes.
