Crushed potatoes with garlic and thyme

  • 800 g small potatoes
  • 75 g butter
  • 2 cloves garlic, pressed
  • 5 sprigs thyme
  • Salt and freshly ground pepper
  • 50 g parmesan
  • Serving suggestions:
  • Chives, finely chopped
  • Svansø Aioli


1. Clean the potatoes and boil them whole in lightly salted water for about 10-12 minutes.

2. Turn the oven to 180 degrees convection.

3. Drain the water.

4. Put them on a baking tray and crush them lightly with a fork or the bottom of a glass.

5. Melt the butter and brush the potatoes with it. Put the thyme and garlic on the potatoes and season with salt and pepper.

6. Bake the potatoes in the oven for about 12 minutes.

7. Remove the potatoes and grate the Parmesan over them.

8. Bake for a further 5-7 minutes until golden and crisp. Feel free to check on them along the way.

9. Serve with freshly chopped chives and aioli.
