Salad with grilled vegetables and creamy fresh dressing

1. Dice the peppers and slice the courgette and aubergine

2. Toss the vegetables in olive oil and grill for a few minutes.

3. Cut cherry tomatoes in half

4. Boil pearl barley according to package instructions and rinse in cold water

5. Mix cooled pearl barley with grilled vegetables, lemon zest, lemon juice, olive oil and rocket

6. Toast the almond slivers over low heat until golden

7. Sprinkle the salad with almond slivers and herbs and serve with creamy fresh dressing
