French potato salad

  • 1 kg boiled potatoes
  • ½ glass sun-dried tomatoes
  • 1 dl Svansø Dijon Vinaigrette
  • ½ glass of ramson pesto
  • 1 chopped red onion
  • 2 tsp. lemon juice
  • 1 clove pressed garlic
  • 1 handful of rocket salad
  • 50 g grated parmesan
  • Freshly ground pepper


1. Peel and boil the potatoes in lightly salted water and leave to cool.

2. When the potatoes are completely cooled, cut them into smaller pieces.

3. Drain the sun-dried tomatoes and toss with the Dijon vinaigrette, chive pesto, red onion, lemon juice, garlic, rocket and grated Parmesan.

4. Lightly stir the potatoes into the mixture and season with freshly ground pepper.
