1. Carefully pluck the largest leaves from the red pointed cabbage. Keep 8 of them. Shred the remaining leaves.

2. Heat a frying pan and add the sunflower seeds and honey. Let them toast over medium heat while you prepare the rest.

3. Cut the tofu into long sticks and fry them in a pan on all sides.

4. Chop the spinach and slice the avocados.

5. Spread a layer of hummus and avocado cream on the bottom of the cabbage leaf.

6. Top with fresh avocado, spinach, fried tofu, edamame beans and honey-roasted sunflower seeds.

7. Finish with chilli pesto or creamy fresh dressing.
