Preparation

1. Place the wooden skewers in a container of water and leave to soak for at least 30 minutes.

2. Mix aioli with red pepper, parsley, lemon juice and pesto. Season with sea salt and freshly ground pepper.

3. Remove the shells from the tiger prawns, but leave the tail fins on.

4. Marinate the tiger prawns in 1/3 of the aioli mixture for at least 30 minutes, then place 2-3 tiger prawns on each wooden skewer.

5. Place the tiger prawns in an ovenproof dish and heat in the oven at 200°C for 8-10 minutes.

6. Serve the warm tiger prawns with a crisp green salad and coarse bread, and use the rest of the aioli mixture as a dip.
