Grilled sweet potatoes with feta, pomegranate and truffle mayonnaise

Preparation

1. Wash the sweet potatoes thoroughly and prick them a few times with a fork.

2. Brush them with oil and sprinkle with a little salt. Wrap them in tin foil.

3. Place directly on the grill (medium heat) with the lid closed and grill for 40-50 minutes until completely tender. Turn them a few times along the way.

4. Meanwhile, toast the sunflower seeds in a dry pan. When golden, remove the pan from the heat, add honey and water. Stir until the liquid has evaporated and then pour them onto a plate to cool.

5. When the potatoes are done, remove the foil. Make an incision in each potato and press them open slightly.

6. Fill the potatoes with crumbled feta, pomegranate seeds, honey-roasted sunflower seeds and chopped parsley.

7. Top the potato with truffle mayonnaise and serve immediately.

TIP: Serve the baked sweet potatoes with juicy, delicious chicken skewers.
