Avocado salad

1. Peel the prawns.

2. Cut the avocado flesh into large chunks or cubes and mix in a little lemon juice.

3. Drain the sun-dried tomatoes and mix with the prawns, avocado nuts and chia seeds.

4. Cut the peel of the grapefruit with a knife and make fine fillets of the fruit.

5. Arrange the avocado salad on a bed of spinach leaves and top with beetroot sprouts and mango/chilli dressing.

6. Enjoy the salad with a coarse, freshly baked bread.
