Grilled tiger prawns with aioli and sour salad

1. Place the wooden skewers in a container of water and leave to soak for at least 30 minutes.

2. Mix aioli with red pepper, parsley, lemon juice and pesto.

3. Season with sea salt and freshly ground pepper.

4. Remove the shells from the tiger prawns, but leave the tail fins on.

5. Marinate the tiger prawns in 1/3 of the aioli mixture for at least 30 minutes, then place 2-3 tiger prawns on each wooden skewer.

6. Grill the prawns on a grill pan or on the garden grill.

7. Finely chop both salads with a knife or on a mandoline grater.

8. Crush the red pointed cabbage with a little salt, condimento bianco and freshly ground pepper. Leave to soak until serving.

9. Strain the vinegar mixture and toss the sliced red cabbage with the frillice salad and walnut kernels.
