French farmer salad

  • 500 g green asparagus
  • 1 frillice lettuce head
  • 2 small red onions
  • 1 yellow pepper
  • 250 g San Marzano tomatoes
  • 1 jar sun-dried tomatoes
  • 1 glass grilled artichokes
  • 1 bottle Svansø Dijon vinaigrette
  • Coarse bread


1. Steam the green asparagus for 2-3 minutes and leave to cool slightly.

2. Rinse the lettuce leaves and pick them into smaller pieces.

3. Cut the red onion, bell pepper, tomatoes and asparagus into suitable pieces.

4. Drain the sun-dried tomatoes and artichokes of oil.

5. Carefully mix together the lettuce, red onion, bell pepper, tomatoes, asparagus, sun-dried tomatoes and artichokes and divide into 4 bowls.

6. Serve with Dijon vinaigrette and coarse bread.
