1. Take the spring roll dough out of the freezer to defrost.

2. Clean the carrots and grate them coarsely.

3. Sauté the onion and garlic in a little olive oil.

4. Add the grated carrots and pesto and fry for 3-4 minutes.

5. Add the bean sprouts and fry for 1 minute.

6. Then add the soy sauce, ginger, lime juice, balsamic vinegar and cane sugar and fry until the liquid has reduced.

7. Roll the filling into the 20 dough sheets according to the instructions on the spring roll dough packet and fry them on all sides in a pan with olive oil over a medium heat until golden.

8. Serve Svansø Aioli with chilli as a dip for the rolls.
