Ingredients
- 100 g pine nuts
- 500 g celeriac
- 5 dl Creme Fraiche
- Sea salt
- Freshly ground pepper
- 700 g boneless cod fillet
- 1 jar Svansø Green pesto
- 1 tbsp. breadcrumbs
- 4 tomatoes
Preparation
1. Lightly toast the pine nuts in a frying pan and leave to cool slightly.
2. Clean the celery bulb, grate it coarsely and mix it with the pine nuts and sour cream.
3. Season with sea salt and pepper and refrigerate the celeriac salad.
4. Cut the cod fillet into suitable pieces and place them in an ovenproof dish.
5. Mix the pesto with the breadcrumbs and spread the mixture on top of the cod pieces.
6. Sprinkle with a little extra breadcrumbs.
7. Place the tomatoes in an ovenproof dish and bake in the oven with the cod for about 20 minutes at 200°C.
8. Serve the cod and tomatoes with the cold celeriac salad.
