1. Take the spring roll dough out of the freezer to defrost.

2. Clean the carrots and grate them coarsely.

3. Fry the pork, onion and garlic in a little olive oil.

4. Add the grated carrots and pesto. Fry for another 3-4 minutes.

5. Add the bean sprouts and fry for 1 minute.

6. Then add the soy sauce, ginger, lime juice, balsamic vinegar and cane sugar and fry until the liquid has reduced.

7. Roll the filling into the 12 dough sheets according to the instructions on the spring roll dough packet. Fry them on all sides in a pan with olive oil over medium heat until golden.

8. Serve the rolls with a quick-fried noodle salad with vegetables and a little soy sauce.
