Grilled vegetables with tournedos and pepper sauce

Ingredients

  • Grilled vegetables
  • 1 large squash
  • 2 sweet potatoes
  • 1 eggplant
  • 1-2 red onions
  • 1 tbsp. Svansø olive oil
  • 150 g fresh spinach
  • Salt and freshly ground black pepper
  • Meat and sauce
  • 4 pieces of beef tournedos
  • 1 glass Svansø pepper sauce

Preparation

1. Cut the courgette and sweet potatoes into sticks, slice the aubergine and peel the red onion.

2. Brush the courgettes, sweet potatoes, aubergine and red onion with a little olive oil and fry them on a grill or grill pan.

3. Cut the red onion into wedges and then toss all the grilled vegetables with fresh spinach. Season with salt and pepper.

4. Fry the beef tournedos in a good hot pan for 3-5 minutes, depending on the thickness of the meat.

5. Serve with grilled vegetables and pepper sauce.
