Spiced wholemeal rice

1. Sauté the rice in the oil in a large pan.

2. Lightly crush the contents of the cardamom pods and add to the pan with the cinnamon and water.

3. Bring the rice to the boil and simmer for about 20 minutes.

4. Meanwhile, chop the almonds and toast lightly in a dry frying pan.

5. Add the almonds, carrots, chilli and raisins to the pan and simmer for a further 15 minutes on a low heat.

6. Season with a little salt and garnish with freshly chopped mint.

7. The spicy wholemeal rice can be served with tzatziki and grilled chicken fillet.
