Köfte with rice salad

1. Cook the rice according to the instructions on the bag and strain off the water.

2. Cool the rice in a serving bowl.

3. Mix the meat well with the egg, pressed garlic, lemon zest, parsley, coriander, cumin and sea salt.

4. Form the meatballs into 8 oblong meatballs and fry them on all sides in olive oil in a pan.

5. The nuts and seeds are also toasted in a pan with a little olive oil.

6. Add half of the soya and cook over a high heat, stirring, until the soya has glazed the nuts and seeds.

7. Spread the nut mixture over the rice and pour the other half of the soy sauce over the rice and nut mixture.

8. The dish can be served with roasted root vegetables.
