Grilled corn on the cob tossed in aioli topped with crispy Serrano ham

  1. Preheat the grill and oven to 225°c
  2. Spread the Serrano ham on a baking sheet
  3. Bake them 5-6 min until crispy
  4. Let the slices cool
  5. Crush or chop them into smaller pieces
  6. Fold the leaves back on the cobs and remove only the "hairs"
  7. Place the corn cobs with leaves in cold water for about 10 minutes
  8. Pick them up and shake them lightly for water
  9. Apply a few drops of olive oil and salt directly onto the corn and run the leaves up again.
  10. Grill the corn on the cob for 12-15 minutes (batter them evenly)
  11. Remove from the grill and let them rest for 5 minutes
  12. Get out the rose pepper and a sieve
  13. Fold the leaves back on the cobs or remove them completely
  14. Coat the cobs well in aioli
  15. Finally, sprinkle with the crispy serrano and pink peppercorns either through a sieve or by rolling them by hand. (try to avoid getting the seeds)
