Spinach waffles with chili pesto

Ingredients

  • 1 ready-mixed pancake/waffle batter
  • 1 jar Svansø Chili Pesto
  • A handful of pine nuts
  • 4 packages of fresh mozzarella
  • 1 bag of spinach
  • Salt and pepper

Preparation

1. Make the waffle batter according to the instructions on the package. Put it in a blender with almost all the spinach.

2. Blend until the consistency is smooth and the dough is green.

3. Cook the waffles in a waffle iron until they are cooked through.

4. Drain the water from the mozzarella balls.

5. Toast the pine nuts in a dry pan until lightly golden.

6. Place two waffles on a plate and top them with pieces of fresh mozzarella.

7. Spread 2 tbsp. Svansø Chili Pesto on top of the mozzarella.

8. Sprinkle some toasted pine nuts and fresh spinach leaves over the dish.

9. Finish with a sprinkle of salt and freshly ground pepper.
