"Country bread" with red pesto and grilled zucchini

Ingredients

  • 1 sourdough bread
  • 1 jar Svansø Red Pesto
  • 2 mini romaine lettuce
  • 2 red onions
  • 2 squash
  • Approx. 100 g Parmesan cheese
  • Svansø Virgin Olive Oil
  • Salt and pepper

Preparation

1. Thinly slice the squash and place on a hot grill pan.

2. Turn after two minutes and repeat until all the squash slices are cooked through.

3. Remove the squash slices from the pan and place them in a bowl with olive oil, salt and freshly ground pepper. Toss them well.

4. Thinly slice the red onion and fry it in a hot pan with a little olive oil and salt until clear.

5. Cut the bread in half in both sides so that you have 4 open slices. Brush them well with olive oil.

6. Fry the 4 slices of bread in a pan until the open side is crispy.

7. Finely chop the romaine lettuce and place it on the bread.

8. Add the fried red onions and spread a layer of Svansø Red Pesto on top.

9. Finish with grated Parmesan, salt and freshly ground pepper.
