Preparation

Start by making pickled red onions*

Toss the sausages in a little olive oil and grill them on the grill over the fire for 5-6 minutes on each side.

Place the bread on the grate over the fire or in the oven and heat quickly.

Put the sausages in the rolls and add ketchup and aioli. Top with pickled red onions and garnish with lots of fresh tarragon.

Cut the red onions into rings. Put the acacia honey and vinegar in a saucepan and bring to the boil - stir until the honey has dissolved.

Put the onion rings in a large glass and pour over the liquid. Cover tightly with a lid and store in the fridge until you need them - they're best left for at least 2 hours and preferably overnight.
