Pancakes with mascarpone and nutella

  • Nutella:
  • 100 g Svansø Hazelnuts
  • 2 tbsp. acacia honey
  • 50 g dark chocolate
  • Pancakes with mascarpone:
  • 3 eggs (divided into yolks and whites)
  • 3 tbsp. sugar
  • 2 tsp. vanilla sugar
  • 1½ dl cream
  • 1½ dl mini milk
  • 250 g wheat flour
  • 1 tsp. baking powder
  • 150 g mascarpone cream


Homemade nutella
1. Toast the hazelnuts in the oven for 10-12 minutes.

2. Blend the hazelnuts finely and continue until they reach a creamy consistency.

3. Add melted dark chocolate and acacia honey. Blend further.

4. Put the homemade nutella in a container and keep it in the fridge.

Before using the nutella, take it out of the fridge (about 1-2 hours before). Then it can soften a little.

Pancakes with mascarpone
1. Mix the egg yolks, sugar and vanilla together.

2. Add the cream and milk.

3. Then add the mixture of flour and baking powder.

4. Stir the mascarpone cream into the dough.

5. Beat the egg whites until stiff and fold them into the dough.

6. Fry the pancakes in butter in the pan.

The pancakes are eaten with the homemade nutella.
