Blondie with blackberries, nuts and rosemary

  • Blonds:
  • 125 g butter
  • 125 g chopped white chocolate
  • 190 g Svansø Cane sugar
  • 3 eggs
  • 100 g wheat flour
  • 50 g Svansø Almond flour
  • 1/4 tsp. baking soda
  • 75 g Organic Svansø Hazelnuts
  • 0,5 tsp. lemon zest
  • Blackberry syrup (for frosting):
  • 150 g blackberries
  • 50 g sugar
  • 1 tsp. vanilla sugar
  • Juice of half a lemon (save the zest for frosting)
  • 2 tbsp. water
  • 1 large sprig rosemary
  • Blackberry and rosemary frosting:
  • 200 g butter
  • 400 g icing sugar
  • Peel of half a lemon
  • Homemade syrup from the blackberry porridge


1. Start by melting the butter in a saucepan.

2. Add the chopped white chocolate to the melted butter and stir in the chocolate.

3. Next, add the sugar to the butter/chocolate and mix until combined.

4. Add the eggs to the sugar mixture and stir to combine.

5. In a bowl, mix the flour, almond flour and baking soda, then sift into the wet mixture.

6. Grate lemon zest into the cake batter. Add chopped hazelnuts.

7. Bake the lace base at 175°C for 22-25 minutes and leave to cool completely before cutting into pieces and spreading with the icing.

Blackberry syrup
1. Put blackberries, sugar, water, vanilla sugar, rosemary and lemon juice in a saucepan.

2. Once the berries are cooked, blend the mixture with a hand blender.

3. Strain the blackberry puree through a sieve so that you can use the blackberry syrup for the frosting.

4. Allow the blackberry syrup to cool completely before mixing with the frosting

Blackberry Frosting
1. Beat the butter until light and fluffy.

2. Add the icing sugar and continue beating until light and fluffy.

3. Add the homemade blackberry syrup and lemon zest to the frosting and whisk until the mixture turns a nice pink colour.

4. Put the blackberry frosting in a piping bag with a nozzle.

1. Cut the blondie base into oblong pieces.

2. Sprinkle the dots with blackberry frosting.

3. Halve fresh blackberries and place them on the frosting with fresh rosemary.

4. Serve immediately or keep refrigerated until.
