Nut cakes with hazelnuts

  • 150 g Svansø Hazelnuts
  • 300 g room-temperature butter
  • 180 g sugar
  • 1 tsp. baking powder
  • 350 g wheat flour
  • 1 pinch of table salt


1. Place the hazelnuts in a food processor or mini chopper and blend until finely chopped.

2. Put the hazelnuts in a bowl with the butter, sugar, wheat flour, baking powder and a pinch of salt.

3. Knead all the ingredients well together to form a homogeneous dough.

4. Refrigerate the dough for 35 minutes.

5. Turn on the oven to 200°C.

6. Line a baking tray with baking paper.

7. Roll the dough into small balls, place them on the baking sheet and press the balls with a fork - first on one side and then on the other side.

8. Bake the nut cakes for about 10-12 minutes until golden.

9. Let them cool on a baking tray before eating. They will be crispy when cooled.

10. Store in an airtight container.
