Healthier banana cake without flour and sugar

  • 3 whole eggs
  • 45 g flower honey
  • 110 g coarse rolled oats (blended into fine flour)
  • 30 g Svansø Hazelnut kernels
  • 1,5 tbsp. sunflower oil
  • 3 ripe bananas
  • 1 banana for the top of the cake


1. Whip a light and fluffy egg yolk from the eggs and flower honey.

2. Meanwhile, blend the oatmeal into fine flour.

3. When the eggnog is light and fluffy, fold in the sunflower oil.

4. Mash the ripe bananas completely. Add the bananas to the egg juice, followed by the blended oatmeal.

5. Cover a loaf tin with baking paper. Pour in the banana batter.

6. Halve a banana and place it on top of the cake batter.

7. Bake the banana cake in the oven at 180° C for 35-40 minutes - until set.
