Ingredients

Preparation

1. Dissolve the yeast and sugar in the lukewarm water - you can make the buns in a mixer or mix them together with a spoon in a bowl.

2. Add the salt and both types of flour and mix well for a few minutes.

3. Put the walnuts in the bowl and knead them into the dough.

4. Let the dough rise for 2 hours at room temperature before refrigerating.

5. Refrigerate the dough overnight with cling film or a damp cloth over the bowl.

6. Let the dough rise for at least 8 hours - and preferably up to 12 hours.

7. Turn on the oven to 250°C convection - preferably 40 minutes before baking, so that your oven is well heated. If you have a baking tray, heat this in the oven too.

8. Turn the dough out onto a floured board and chop a total of 8-10 buns.

9. Transfer the buns onto a piece of baking paper and onto your baking rack or a baking tray.

10. Put the buns in the oven. Turn the heat down to 230°C and bake the buns for about 15-18 minutes, until they are golden and sound hollow when you tap the bottom of them.

11. Let them cool on a baking tray.
