Quinoa salad
1. Rinse the quinoa and boil in lightly salted water for 15 minutes.

2. Lemon juice and zest, tomato paste, olive oil, salt and pepper are mixed into the cooked quinoa.

3. Then add the grilled peppers, Kalamata olives, feta and broad-leaf parsley.

4. For the dressing, mix the ingredients together and season to taste.

5. Split the pita bread and cut into triangles. Place on a baking tray, brush with olive oil and place in the oven at 180 degrees for about 10 minutes - until crispy.

6. The quinoa salad is served with dressing and the crispy pita bread.
