Preparation

1. Slice the courgette and aubergine and divide each spring onion into 3 pieces.

2. Brush the courgette, aubergine, spring onion, snack pepper and cherry tomato with olive oil and roast the vegetables on the barbecue or in a grill pan.

3. Sprinkle with salt and pepper and leave the vegetables to cool slightly. Cut the snack peppers into smaller pieces and mix all the grilled vegetables with the salad, sprinkling with almond flakes.

4. Garnish the salad with fresh basil and garlic dressing.

Tip: Make the salad even more filling by adding cooked pearl barley or spelt and roast chicken or turkey.
