Oatmeal with baked fruits

  • Oatmeal:
  • 3 dl organic fine rolled oats
  • 1 tbsp. Svansø Chia seeds
  • 6½ dl oat milk or water
  • 1 tsp. vanilla sugar
  • 1 pinch of salt
  • Topping for the oatmeal:
  • 2 plums
  • 6 strawberries
  • 2 tbsp. maple syrup
  • 2 dl plant-based yoghurt
  • 2 tbsp. popped quinoa
  • 2 tbsp. blackcurrant jam
  • 2 tbsp. Svansø Slivered almonds
  • Extra oat milk if needed


  • Turn on the oven to 200°C.
  • Halve the plums and remove the stones.
  • Also halve the strawberries and put all the fruit in a bowl. Add the syrup and toss so that all the fruit is covered in the syrup.
  • Spread the fruit out on a baking tray lined with baking paper and leave to bake for 15-18 minutes.
  • Put the oatmeal and milk in a saucepan and bring to the boil.
  • When the porridge starts to thicken, add the remaining ingredients and stir until the porridge has the desired consistency.
  • Divide the porridge into two bowls, then add the baked fruit and the remaining topping.
