Quinoa porridge with caramelised peach and lavender

  • 1 dl quinoa
  • 2 dl finely rolled oatmeal
  • 2 tbsp. salt
  • 2 peaches
  • 2 tsp. coconut oil
  • 2 tbsp. elderflower syrup or other syrup
  • 4 tsp. edible dried lavender
  • 2 tbsp. Svansø Almonds
  • 1-2 dl plant-based yoghurt


1. Rinse the quinoa and put it in a pan with 2 dl of water.

2. Bring to the boil and then turn down the heat. Let it simmer for 10 minutes.

3. Cut the peaches into thin 3-4 mm slices.

4. Heat a pan with coconut oil. Add the peach slices and sauté for 10 seconds before adding the syrup.

5. Turn down the heat and simmer for 1 minute before turning the slices over and giving them 30 seconds on the other side.

6. Transfer the slices to a plate so they don't soak up any more fat in the pan.

7. Now add the oats and salt to the porridge and stir. Let it simmer for 5-6 minutes until it has a good consistency.

8. Pour the cream into bowls and place the peaches on top.

9. Chop the almonds and add them to the yoghurt and lavender.

Eat the porridge while it is hot.
